This tangy, crisp and crunchy salad is the perfect light and refreshing lunch. This recipe can be ready to be enjoyed in just 10 minutes.

Watermelon, Orange and feta Salad

1/2 watermelon, diced and remove seeds (400g) 2 oranges, segmented (300g) Toasted Pine nuts (50g)
2 bunches of wild rocket (90g) Feta cheese, crumbled (50g)
Extra virgin olive oil (100ml) Aged balsamic vinegar (35ml) Salt, to taste


  1. Arrange diced watermelon and segmented orange pieces on a plate.
  2. Crumble the feta cheese over.
  3. Scatter with toasted pine nuts and top with wild rocket leaves.
  4. Mix the olive oil and the balsamic vinegar to create a balsamic vinaigrette dressing and cover the entire salad.
