High-Calorie Leek and Potato Soup Recipe for Cancer Patients

This leek and potato soup is a warm, comforting classic designed to support those undergoing pancreatic cancer treatment. Enriched with cream, full-fat milk, and added skimmed milk powder, it delivers a generous boost of calories and protein in a smooth and soothing meal.

Ingredients

  • 50g butter
  • 1 large onion, peeled and chopped (200g)
  • 1 large leek, thoroughly washed and chopped (200g)
  • 2 large potatoes, peeled and chopped (400g)
  • 750ml stock
  • 300ml full-fat milk
  • 100ml cream
  • 120g skimmed milk powder

Method

  1. Melt the butter in a pot and add the onion and leek. Cook gently for 10 minutes without colouring.
  2. Add the potatoes and stock, bring to the boil.
  3. Reduce to a gentle simmer, cover, and cook for 30 minutes.
  4. Whisk together the milk, cream, and skimmed milk powder. Add this mix to the soup.
  5. Blend the soup until smooth. Adjust consistency with extra liquid if needed.
