This tangy, crisp and crunchy salad is the perfect light and refreshing lunch. This recipe can be ready to be enjoyed in just 10 minutes.
Salad Preparation time: 10 minutes / Cooking time: Nil / Serves 4
|1/2 watermelon, diced and remove seeds (400g)
||2 oranges, segmented (300g)
||Toasted Pine nuts (50g)
|2 bunches of wild rocket (90g)
||Feta cheese, crumbled (50g)
|Extra virgin olive oil (100ml)
||Aged balsamic vinegar (35ml)
||Salt, to taste
- Arrange diced watermelon and segmented orange pieces on a plate.
- Crumble the feta cheese over.
- Scatter with toasted pine nuts and top with wild rocket leaves.
- Mix the olive oil and the balsamic vinegar to create a balsamic vinaigrette dressing and cover the entire salad.
